Corona Vegan Quinoa Mango Salad

INGREDIENTS
- 1 Diced Mango
- 100g Quinoa cooked
- 1 Fresh Beet boiled and chopped
- 100g Green salad leaves or spinach
- 25g Sauerkraut
- 1 Red Onion chopped
- 15g Avocado
- 1 cup Cherry Tomatoes
- 1 1/2 Tsp.Toasted Argan oil
- 2 Tsp. Balsamic Vinegar
- Black Pepper to taste
PREPARATION
Pour all ingredients in a large mixing bowl. Add vinegar, olive oil and argan oil. Mix it up! Serve cold alone or with tofu, meat or fish.
